Focaccia potatoes and rosemary

Focaccia con patate e rosmarino is the white variant of focaccia with tomatoes. This focaccia has the same dough of focaccia barese but the topping is with potatoes and rosemary. I used to buy this type of focaccia, when I was an university student.     In fact my friends and I bought this focaccia and other stuff from the bakery near the universtity.

I decided to make it in memory of those moments and also because it’s very tasty!

This is a main course for two people, or an appetizers for more people. As leftover, you can bring it stuffed with ham and mozzarella, for lunch in the office.

INGREDIENTS

BASIC DOUGH

200 grams / 7 oz. of durum flour (semolina)

300 grams flour / 10,5 oz. of bleached all purpose flour (type 00)

350 ml / 11.8 fl. oz. of  warm water

25 grams / 0.8 oz. fresch active yast or ½ packet of active dry yeast

1 tbsp salt

TOPPING

olive oil to taste

salt

3 potatoes (Yukon gold type)

rosemary to taste

PREPARATION
  1. Rinse and peel 3 potatoes, then cut them into cubes. Put 1 tbs of olive oil in a frying pan and add potatoes cubes.
  2. Cook over medium heat for more or less 15 minutes, stirring occasionally. Remove from the heat and let cool them.alt="Step 1-2"
  3. Put semolina flour and all purpose flour in a bowl and make a hole in the middle.
  4. Add in the hole the yeast. Take warm water and dissolve the tablespoon of salt in it. Suddenly spill salt warm water in the bowl and mix together to obtain homogeneous mixture.alt="Step 3-4"
  5. Make a ball, sprinkle a little flour, cover the bowl with clean cloth and rest the mass for one hour.
  6. Then cover a baking tin with a drizzle of olive oil, lay the mass in it.alt="Step 7-8"
  7. Topped with potatoes cubes, salt, rosemary and a little bit of olive oil.
  8. Put in the oven for 200 °C (392 °F) for 40 minutes. Serve warm.
