What is autumn for me?

It’s the sound of my shoes on the crunchy leaves. it’s my beloved homemade soups, my comfort food. It’s the smell of cinnamon. It’s the blanket on the sofa and vanilla candles. It’s sitting next the window and watching the rain go down.

Since halloween is coming and pumpkin is the queen of halloween, I decided to make this soup.

INGREDIENTS

17 oz. of pumpkin

1/2 white onion

1 tbs of olive oil and 1 tbs of butter

black pepper to taste

1 medium potato

cinnamon to taste

bread

1 cube of vegetable bouillon

ground nutmeg to taste

PREPARATION
  1. Chop the onion, cut the pumpkin and the potato into cubes.Alt="step 1-2"
  2. Meanwhile, cut the bread into cubes and put in the oven to toast. Add butter and olive oil in a pot, add the chopped onion and fry it. Then add potato and pumpkin.Alt="step 3-4"
  3. Add water  to cover the vegetables. Add the cube of vegetable bouillon, 1 leaf of bay and the ground nutmeg.  Cook at low heat.
  4. After 30 minutes, add 1 tbs of Worcester sauce, leave the bay leaf and blend with hand blender. Alt="step 5-6"
  5.  Add black pepper and cinnamon to the soup and serve warm with the bread croutons.
