Stuffed Bell peppers

July has come, and with it also bell pepper’s season!!! This season is from June to October, in this period of time, bell peppers are available in grocery store and it is a very tasty option for summer cooking.
Bell peppers is my favorite vegetable. I cook it in so many different ways. But today, I ‘ll show you how to cook stuffed bell peppers.
Stuffed bell peppers, are an Italian dish, born to avoid waste, recovering stale bread, leftover meat or rice. This dish is not a peculiarity of a specific Italian region, in fact a typical recipe of it doesn’t exist and so every region have a characteristic one. For example in regions near the sea, there are bell peppers filled with fish like tuna because in ancient times as well as in the present, fish was of course common in port cities. Conversely in the hinterland people used to fill bell peppers with mince.
Today’s recipe is stuffed bell peppers with tuna, my favorite combination!

COOK TIME: 45 minutes
TOTAL TIME: 55 minutes
SERVES: 3 people

INGREDIENT
3 medium bell peppers
8.8oz (or 250 gr) tuna can
3 cheese slices
1 egg
6 cherry tomatoes
2 tsp of capers
2 tbs of grana padano cheese
2 tbs of pecorino romano cheese (the salty one)
Olive oil
2 tbs breadcrumbs

PREPARATION

1. Cut off the tops of the bell peppers and spoon out the ribs and seeds, then rinse with water. In a medium sized pot, boil water (filled about half full). When the water bubbles, add the bell peppers upside down and wait for 2 minutes.

Remove the peppers from the pot and let them dry on a paper towel.alt="bele peppers collage"

2. Meanwhile make the stuffing. Wash tomatoes and cut them into 4 pieces, wash capers, cut into chunks the cheese slices and put these ingredients in a medium size bowl. Then add tuna, egg, grana and romano cheese. Mix all together.

With a table spoon fill the peppers with the stuffing. Add breadcrumbs on top of the bell peppers. Put the peppers in a high pan like a banana bread pan and add a tablespoon of water and a tablespoon of olive oil at the base of the pot for cooking.

3. Cover the pan with tinfoil and make small holes in it with a fork. Bake at 180° for 45 minutes. When bell peppers are softy and well done, remove from the oven and serve.
